Originally from the canton of Vaud, Allan Gremlich discovered the joy of cooking at a very early age alongside his grandmother. Trained to exacting standards, he earned his stripes in several prestigious establishments such as the
the Hotel la Barcarolle.
He continued his career as a chef in several establishments, including L'Ancre in Nyon, where he refined his style, combining precision, instinct and creativity. With L'Essentiel, he realized a dream: to offer sincere, local and inspired cuisine, in a place that reflects his image.
